Chef Kuya Bill
Chef Bill Martfeld is the heart and creative force behind the kitchen at Lasang Pinoy. Born in Pampanga, Philippines, and raised around the world—from Okinawa and Guam to England and both U.S. coasts—Bill’s global upbringing shaped a deep curiosity for culture, flavor, and storytelling through food. His mother, Tess, first sparked his love of cooking, and to this day, the kitchen remains the family’s favorite gathering place.
A self-proclaimed culinary nerd, Bill reads cookbooks like novels and experiments with flavors like a mad scientist. With more than 20 years of experience in kitchens across the South, he blends techniques and influences from American, European, and Southeast Asian traditions—yet his culinary soul remains rooted in Filipino cuisine.
At Lasang Pinoy, Chef Bill’s mission is clear: honor heritage, feed people good food, and champion Filipino cuisine as a vibrant and essential voice at the global table.
